Ingredients
- 2 boneless chicken breasts
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon (zest + juice)
- 1 cup asparagus pieces
- 1 cup cherry tomatoes
- Salt, pepper, and a pinch of oregano
- Parmesan cheese (optional)
Directions
- Heat olive oil in a skillet over medium heat. Season chicken with salt, pepper, and oregano.
- Cook chicken 5–6 minutes per side until done; remove from pan.
- In the same skillet sauté garlic for 30 seconds, then add asparagus and cook 3–4 minutes.
- Add tomatoes, lemon zest, and lemon juice. Return chicken to the pan and warm through.
- Top with parmesan and serve.
Serving idea: Great over rice, pasta, or quinoa for a quick weeknight meal.
